Day 1:

LAND OF CHIANTI & THE BLACK ROOSTER A morning shuttle from Florence will sweep you immediately into the ancient hills of Chianti, a zone in which wine has been produced since Etruscan times. After a welcome lunch, we’ll visit the esteemed winery of Isole e Olena. In addition to making a fine Chianti, the estate has successfully experimented with international varieties and was perhaps the first in this area to plant syrah. Our second tasting takes us to Poggio al Sole, where we’ll hear the legend of the black rooster and why it has come to be associated with Chianti Classico. Dinner in the Etruscan hilltown of Volterra will introduce the cuisine of Tuscany, which features such fare as rustic bread salad (panzanella), wild boar (cinghiale) with olives, and guinea fowl in wine sauce.

Day 2:
THE TOWER OF SAN GIMIGNANO San Gimignano is known for two things, both of which are rare in Tuscany: its white wine and its extant medieval towers. Today we’ll explore both, beginning with a walk in this walled city, by far the most perfectly preserved medieval town in Europe. We’ll visit the cathedral with its floor-to-ceiling Italian Gothic frescos and those with strong quads can climb the tallest tower. After lunch, we’ll hop in the van and visit two producers of Vernaccia, a white wine acclaimed ever since the time of Dante. In 1643 Michelangelo Buonarotti the Younger wrote that it "kisses, licks, bites, slaps and stings." We’ll test out that theory out at Cesani, a boutique family-run winery that produces two styles of Vernaccia, plus an unforgettable Super Tuscan and a grappa that’s flavored with saffron, another ancient crop of San Gimignano. Dinner on your own in one of the many fine restaurants in Volterra.

Day 3:
THE LEGENDARY SASSICAIA Today we move from Tuscany’s heartland to its coast, crossing the Apennine mountains. Along the way, we’ll stop for a picnic lunch at a wonderful location: the patio of an olive oil mill, surrounded by craggy, silver-leafed olive trees. Fragrant and piquant olive oil will accompany an array of pecorino cheeses, sundried tomatoes, fresh-picked fruits, and other Tuscan treats. The afternoon will feature the wines of Bolgheri, the town that first put Maremma on the map of wine lovers. We’ll travel down a cypress-lined road to the estate of Tenuta San Guido, cradle of the legendary Sassicaia wine. Back in 1944, cuttings from the Chateau Lafite-Rothschild in Bordeaux were planted here to see how Cabernet would do in this setting. Then French oak barriques were introduced into Tuscan winemaking. The rest is history, a veritable revolution in Italian winemaking that continues to this day. Dinner is in Castagneto Carducci, one of the Maremma’s charming medieval hilltowns that overlooks the sweeping plain and distant sparkling sea.

Day 4:
IN THE TUSCAN KITCHEN Roll up your sleeves for a hands-on lesson in Tuscan cooking. The chefs at our hotel will supervise our efforts to replicate their simple but oh-so-tasty Tuscan cuisine, which is centered on homemade pasta, rustic soups, and game from the woods. After dining on our valiant efforts, we’ll explore the wine zone surrounding Castagneto Carducci. Our first stop is Grattamacco, an up-and-coming family winery on a beautiful piece of property that is gaining notice for its cabernet/sangiovese/merlot blends. We’ll next taste the delicious wines of Michele Satta, where we can compare straight sangiovese with the new blends of sangiovese mixed with international grape varieties. Dinner is in Sassetta, an ancient town nestled in the folds of the Apennines.

Day 5:
THE JEWEL IN THE CROWN Though less famous that Pisa, Siena, or Florence, Massa Marittima has a main piazza that’s every bit as beautiful. What’s more, its intricately carved Gothic Duomo has recently been cleaned, so this is your chance to see a cathedral as sparkling and lovely as it was a thousand years ago. Next door is one of the masterpieces of Italian Gothic painting, Lorenzetti’s Maesta, which we’ll stop to admire. Then we’ll tour an antique olive oil factory, and compare the methods of yesteryear with what we saw at our picnic two days ago. After lunch in town and an optional climb up the city’s medieval tower, we’ll visit two producers in the wine zone of Suvereto, beginning with Moris Farms. We’ll sample their highly praised Morellino di Scansano, a wine created from the area’s sangiovese clone, as well as their Super Tuscan blend. Our final tasting is at the family-run winery Gualdo del Re ("King’s Forest"), named after the property once belonging to the Dukes of Lucca from a time when the Longobards ruled. During our farewell dinner in the hotel’s elegant restaurant, we’ll toast new friends, new discoveries, and new memories.
